Meeting with Stefan Belke from Winkhausen

A heavy door, a cool draught of air, then it's a hundred meters deep into the mountain, past rails and old mine cars. The cheese wheels from Stefan Belke are now stored in the Helleberg tunnel, where slate was once mined. They have the perfect climate for maturing here, as the millions of years old rock maintains a constant temperature of six degrees Celsius and 95 percent humidity. The farmer turns and washes the wheels from time to time with Winkhausen the loaves with salt water from time to time, otherwise they prefer to have their peace and quiet so that they can mature underground.

And what does the "Glück-Auf" cheese taste like? Indescribably different! The milk from his sixty cows, all of which Stefan Belke knows by name and which graze around the Heimes Hof farm in the picturesque Lenne Valley, Werden is also used to make other "Winkhauser" cheeses, as he calls his products. In the mobile "cheese dairy on tour", the raw milk is processed into cheese blanks directly in front of the barn, later soaked in a salt bath and brushed daily with salt water and red smear cultures. This creates a tangy natural rind. There are twelve flavors of the semi-hard cheese - depending on the season, sometimes with wild garlic, blue fenugreek or simply plain. You can buy the "Winkhauser" in many stores in the region and directly from the cheese vending machine on the farm of Stefan Belke and his family in Winkhausen.
